Having some people over this weekend and cooking some ribs. I want to make some tasty apps to serve before hand. If I cook wings, ABT's, Turtle eggs before I start the ribs can I keep them warm in the oven for a couple of hours. I know I need another egg but won't happen in time. I could also cook on my second grid above the ribs but didn't want other tastes dripping on my ribs.  Any help would be appreciated!

I picked up this little gem over the holidays with a amazon gift card. I have to say i am pretty impressed with its ability to light lump and it stores nicely. It gets lump going faster then I can get my egg ready to cook. It also could be used as a means to keeps sauces warm ext. Be careful not to leave the lump on there to long as it will get the burner to hot. I hope this helps someone.

Well we took some of our income tax check and went and got a half a cow and a whole hog from a semi local slaughter house.  God is good to us !!!

Total cost was just under $1000 once I bought some of there sauces.

I have had my Large BGE since Dec of 2009 and have a crack in my firebox ring. 
A- Is this under warranty
B- is it dangerous to continue cooking with it the way it is?

In the wake of Mrs. Parallel's recent medical issues, many of our friends and family who had RSVP'd for our son's seventh annual birthday bash (this year a week early due to Easter being so early) wondered if the party would be called off. Ha! Not a chance... Mrs. Parallel is a proper southern gal, therefore hospitality and entertaining is in her blood. She was incredulous when they suggested that it might be too much of a strain for her to carry on with the party plans, mostly because I'm doing a large chunk of the cooking this year even though crawfish are nearly as rare as ammo this season.

I'm about to get things set up for an overnight low and slow. On the menu is two roughly 8lb Boston butts; one dusted with dizzy dust and a traditional Southern BBQ sauce and the second a pseudo Cuban "mojo" butt. The party kicks off at 1:00 PM so I'll be looking to get the butts on the egg by about midnight.

I tried using the 3-2-1 method to cook ribs tonight. They looked good after 3 hours. I foiled them then looked at them in 2 hours and this was what I found, cooked so much I couldn't get them out of the foil wirhout them falling apart. I put them back on for about 15 minutes to get some of the moister out. They actually tasted pretty good. I cooked them at about 230° the entire time. Anyone else had this experience with the 3-2-1 method?

Ok hope you don't think this is a stupid question, but I got a very basic electronic meat thermometer with a probe you put in the meat with the wire that runs to the little dock thing.  My question is what good is it as a leave in thermometer if the silicone coated wire can only handle 390 degrees? Any suggestions?

Salado recipes

Thought I'd share my two cooks at Salado. I hope others will because i missed a bunch of them.
My first was stuffed pears. Red pears, peeled halved and hollowed out. I stuffed them with cream and cheddar cheese and walnuts, wrapped in Wright's bacon. I dusted with a rub i get in Nashville. I like goat cheese better but the kids hate it so i went with the normal. Try the goat cheese.
Stuffed poblanos were next. Roasted, peeled then cut a line down one side and filled with 3 pepper cheese, black beans, Chorizo, wrapped in bacon, a little swamp venom and served with a chilled corn salsa. I use habanero at home but couldn't find it in Waco.
All in all i was pleased.

Kamado (Egg) Restoration Project

Hey All,

Picked up a bit of a project egg to try and get back up and running. It is a medium and and older (I'd estimate early 90's). Here are some pictures from the craigslist ad that I picked it up from...

Here is it at home next to my Large BGE...

Hoping to keep the project cost as low as possible. I paid $40 for it which I think is a good start.

The base and dome are in great shape. The Fire Ring can be saved, I think (crossing fingers). The firebox was too far gone... Broke into over 10 pieces and missing a large chunk. The nest needs to be cleaned up and probably some new caster wheels and hardware but overall good shape.

Missing pieces are pretty much all metal (bands, draft door, daisy wheel), damper and it needs a firebox. 
If anyone has any of these items they are looking to sale for a decent price let me know. Cracked or chipped ceramic pieces that you already had replaced taking up room in the garage... I'll take it off your hands :)

Another Egghead Joins the Cult

My buddy called me the other day and said it was official, he became an egghead. He loved coming to my house and messing around with my XL and knew the egg was the cooker for him. His Large BGE was delivered yesterday.  We'll be building his table this weekend. I'll get him to join the forum too. He was asking me about indirect setups because he did not buy a plate setter.

I have the plate setter, but recommended he check out the Ceramic Grill Store web site before making a decision. I couldn't give him advice on which setup to get, so I'm looking for your suggestions.

I know that he plans on cooking pizzas, but also is interested in all of our bbq favorites like butts, briskets, chicken and ribs. I know that the sky is the limit with these setups, but what do you recommend? Will he need 2 pizza stones or 1? I would assume 1 stone would be the indirect piece, and the 2nd would be for the pizza itself. Should he go for the adjustable rig, or should he go with a woo? What comes with the rig? Tom's site is great, but the options are overwhelming.

After 6+ weeks my new mini base is in. I asked what they need from me and he mentioned bringing it in and they would chuck it if needed.
I thought it would make a great planter and backup if something tragic happend. I know its technically theirs upon getting a news, I may ask to keep as I seen many said they kept old.

1 hour into a three hour cook. I guess ya'll know where this is going!
